Have you ever seem a meal look as satisfying as this? This is probably the best thing I’ve made in a long time. These look totally bad for you but there are seriously delicious and 100% worth it. Loading them up with tones of vegetables makes these veggie quesadillas so filling. They also do not take that long to make at all. And some bits can be made in advance, so they are perfect if you’re having a family gather or a summer party at your home. Afterall, who needs the hassle of hosting? You did invited people over to have fun right? Healthy, filling and delicious. Totally worth putting the minimal effort you need to make them.

Ingredients: Roasted Veggies

1 large red pepper
1 large yellow pepper
2 medium sweet potatoes
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp allspice
chilli flakes (to taste)
drizzle olive oil
salt & pepper

Black beans

1 400g tin of black beans
1/2 tsp ground cumin
1/2 ground coriander
salt & pepper


1 large rip avocado
lemon juice
salt & pepper

To serve

tortilla wraps
sour cream
grated cheese (cheddar is the best)

Loaded veggie quesadillas

Preheat your oven to 220C. Chop the pepper into thin slices. Peel the sweet potatoes and chop into thin rounds. Place the veggies in a large roasting tray, sprinkle over the cumin coriander, allspice and chilli powder. Season with salt & pepper and drizzle the olive oil. Toss everything together to coat and then roast these lovelies for about half an hour until they are tender.

Rinse and drain the black beans and place in a small pan with the cumin, coriander, salt & pepper. Mash with a potato masher until roughly mashed and then heat until warmed through. Once done, leave on a low heat or set to one side. For the guac, place the avocado flesh in a bowl and mash with the back of a fork. Add lemon juice, salt and pepper to your taste.

To serve, spread the sour scream one half of the tortilla wrap. Spread the black beans over the other half. Load the guac on top of the beans, layer the veggies on top and sprinkle with the grated cheese. Fold in half. Repeat until you have enough servings for everyone (one tortilla will serve one person, trust me.) Lightly grease a large frying pan with olive oil over a medium heat. Place the folded tortillas in the pan and heat for about five mins until light brown. Carefully flip them over and repeat on the other side. Carefully remove to a serving board and tuck in.
