Summer Peri Peri Chicken


Summer is FINALLY here!! 

Thank god the sunshine is here in England and I can enjoy my balcony!! And what better way to do it than Christen it was a outdoor summer meal. 

When the weather is hot you don't really want a heavy big meal, so chicken with a small salad or light vegetables is the perfect evening summer meal. This is spicy but mild, light and tangy- the perfect taste combination in my eyes! 


THE INGREDIENTS
- chicken breast (skins off)
- peri peri seasoning
- olive oil
- salt and pepper
- Henderson's relish
- limes
---------------------------------




Add your chicken breasts, peri peri seasoning, olive oil, salt, petter, Henderson's relish and limes into a bowl. Mix together in a bowl and leave to marinate for a few hours, ideally more than four hours. Give it all day, let it have it's time to sock up all the flavours. 

Once marinated, simply grill it; either in the oven or on a skillet pan. It should only need a few minutes on either side. Once grill serve with your side dishes, in my case avocado, asparagus and raw slaw. 










The perfect summer evening.
