Savory Pancakes (Low Carb!)


New year, new starts and for some a new healthy lifestyle. But just because you have decided to give up all the bad foods, doesn't mean you have to give them up completely!



This is a great recipe to have as a cheeky brunch dish, or a possible small dinner dish for those days where you just don't want to have a big meal. It's a great dish inspired by the brunch I had at Gails in London but also adapted from a recipe in Jamie Oliver's new super healthy cookbook: Everyday Super Food.

These pancakes are delicious, they use wholemeal self raising flour so they are nice and fluffy, about any vegetables you would like in it and delicious cheese that you can make as indulgent or as healthy as you like. They are utterly delicious and lavish and look more impressive than they are to make. 



THE INGREDIENTS(Serves Four)
- x1 340 g tin of sweetcorn
- 6 spring onions
- red pepper
- orange pepper
- 1 chilli flakes (less hot!)
- 2 large free- range eggs 
- 200 g mascarpone cheese
- 150 g wholemeal self- raising flour
- 50 ml skimmed milk
- olive oil

- Tip the sweetcorn into a bowl (including liquid). Trim the spring onions and add chili flakes.

- Add into the bowl the eggs, cheese and flour. Mix together and gradually loosen with the milk to a thick but oozy batter. Season with sea salt and black pepper. 




- Heat a pan on medium heat. Pour your batter into your pan and cook until golden on the underside. Flip over and cook the over side until cooked. Keep warm on a plate under kitchen foil until ready to serve. 

- Serve with a dollop of guacamole and sour cream.




These are perfect for a fancy breakfast treat during a health kick or if you fancy hosting brunch club at your place- it's a great simple way to show off.
