Healthy Mexican Tacos


I am so excited that I found this recipe that lets me combine my love of fast street food with a healthy lifestyle....
 


I love Mexican food and I love tacos. What I don't like is the bloat it gives me afterwards. Thank god I can forget about all that now with Madeline Shaw's healthy taco recipe with salsa (another thing that I could eat by the bucket full!) I love her new cookbook Get The Glow- it's not as scary as some healthy books can be, it gives you some great ideas and food choices in order to achieve a healthier body.

This recipe is perfect to whip up for yourself (and freeze the left overs) or enjoy as a dish with friends and a glass of wine at a dinner party. What's also perfect is that it takes minutes to make! (well not minutes but it is quick!)

THE INGREDIENTS
(Serves Four)
Mexican Mince
-1 tsp Ground cumin
- 1 tsp Paprika
- 1 tsp Chili powder
- 1 tbsp Coconut oil
- 2 Sticks of celery, finely chopped
- 1 White onion, finely chopped
- 500g Beef or lamb mince
- 400g Can tomatoes
- 1 Lime

Salsa
- 2 Spring onions, chopped
- 3 Tomatoes, chopped
- 1 Cucumber, chopped
- 1 Red chili, deseeded and chopped
- Juice of 1 lime
- 2 tbsp chopped coriander
- 2 Avocados, cut into chunks
- 1 Lemon, cut into wedges
- 1 Large cos lettuce, leaves separated
- 100g Natural yogurt
- Salt and pepper

- In a large frying pan, dry- roast the cumin, paprika and chili for one minute over a medium heat,then turn the heat down a little and add the coconut oil, celery onion and a pinch of salt. Saute over a medium heat for five minutes. 

- Add the mince, stirring with a spoon and allowing it to bronze for one minute. Pour in the tomatoes. Let it all gently simmer for one hour, stirring regularly. 

- To make the salsa, mix all the ingredients in a bowl. 

- Cut the avocados into cubes and sprinkle over a pinch of salt and the lemon juice. 

- When the mince is ready, juice the lime into it and give it a stir. Serve with the lettuce leaves as wraps, along with the avocado, yogurt and salsa.
