Broccoli And Avocado Salad

This is perhaps one of the simplest dishes I have ever made, but one of the most filling salads I have ever tried...

I may have an addition to avocado at the moment, and Deliciously Ella's new cookbook is not helping! But I cannot help myself, avocado is one of the best things for you, packed full of super fighting ingredients that not only protect your insides, but also beautify you on the outside too (shiny, shiny hair!) 

This salad is super quick and simple, has very few ingredients and could be rustled up in a matter of minutes as a quick supper from just getting home from work, or as part of an up and coming dish for a summer garden party. 


- 2 Ripe Avocados
- 1 Broccoli Head
- Handful for Fresh Coriander


- Swig of Balsamic Vinegar
- 1 tbs of Mustard
- Glug of Freshly Squeeze Lemon Juice

- Cut up the broccoli and steam for about 7 minutes until soft but still crunchy. Set aside to cool. 

- Cut in half the avocado, remove the stone, peel the skin and cut into cubes. 

- Finely Chop your coriander and mix together with your broccoli and avocado. 

- Mix the dressing ingredients together until your desired taste and drizzle nicely over your salad.

And there you have it people. I told you it was super easy!
