CBLT Salad (Oh Yer!)

Friday nights are for comfort food. Ain't no one got time to go gourmet and get fancy, sometimes after working after a long week at the office, you want something quick and easy. Now, if you are like me and are on a health kick, quick and easy is either A. not healthy or B. not comforting. Enter a new dish for the blog that I just whipped together and hit the spot perfectly!

Enter the CBLT salad, much like a BLT sandwich (the ultimate comfort dinner in my eye) but with added extras and healthiness. It has everything, a little bit of protien, a little bit of veg and vitamins and because it is comfort food, there is the TINIEST bit of unhealthiness in them (it's not even that bad at all!!) I haven't put down the quantities, as with this you just judge the amount on what you personally like, but also if you want to make a large bowl of it- you would naturally buy more!


- Lettuce
- Cherry Tomatoes
- Avocado
- Chicken Breasts
- Prosciutto Cubes
- Feta Cheese

- Pre heat a griddle pan with a little oil and cook your chicken breast. Just before you finish the breast, add your prosciutto cubes until nice and crispy.
- Whilst the meat is cooking, tear your lettuce (I used romaine lettuce), wash and dry. Add to your bowl along with some chopped cherry tomatoes and cubes of avocado. 
- Once your meat is cooked, cut your chicken into strips and add along with the bacon. Toss the salad together to mix well. 
- Finish off with a sprinkling of feta cheese.

It couldn't be easier than that! You can also whip up a great dressing that will work perfectly with this, just a glug of good olive oil, a dash of balsamic vinegar, a tsp of mustard, some lemon juice and a good sprinkling of salt. Mix together and pour all over your salad. 

A smaller version of this would make a great starter, but this size was the perfect dinner time amount! All these ingredients have been chosen for their positive health benefits:

Avocado: this bad boy contains more potassium than bananas, loaded with fibre and fatty acids and is known to lower your cholesterol levels. Plus it is super yummy!! 

Feta Cheese: surprisingly a very healthy cheese! It gives you a good dose of your calcium needs, along with a few vitamins such as Vitamin B12 (good for promoting red blood cell production). 

Chicken: high in protein, a natural anti- depressant and one of the best meats you can eat if you are looking at starting a healthy diet (plus very versatile!) 

Tomatoes: boys, you should eat more of these as there is an ingredient inside tomatoes that helps prevent prostate cancer. They also are full of antioxidants and Vitamins A and C and folic acid.
